    Nice job! I just did a 7 pound bone in port butt. Same method just took longer. Weber and SNS are a great combo!

    Are there any dampers or any way to control air flow on this cooker?

      It looks like the dampers are up top besides the lid. They look half closed earlier in the cook and then fully open later. I was wondering the same thing but I’m guessing this was done to try and get more of that swirling air effect that barrel smokers have.

    You totally made “dry” brining pointless by rinsing the steaks off. Rinsing them undid the dry brining.
